VIN SANTO del Chianti Classico
Der Tradition folgend trocknen wir die frisch gelesenen Malvasia- und Trebbiana-Trauben in einem speziellen, gut gelüfteten Raum 4 Monaten lang, um deren Zuckergehalt zu konzentrieren. Nach einer sanften Pressung gärt und reift der Most 5 Jahren lang in kleinen Fässern (caratelli) .
Blending:
Malvasia del Chianti, Trebbiano toscano.
Harvest:
late, depending on the seasonal climate (usually mid November), grapes are assembled in wood crates and then hung up to dry until December/January.
Soft pressed and fermented in small chestnut or oak casks of 100 litres.
Aging:
5 years in very small casks, and refined in bottles for at least six months.
Colour:
golden yellow, with an intense and persistent taste.
It is ethereal with a dry fruit aroma slightly dry but soft. It is an elegant wine with a good bouquet, a moderately high acidity and is excellent served with cream flavoured desserts such as ice-cream or also with chocolate flavour desserts.
